...and it's getting harder and harder to talk myself out of pulling the trigger. Does anyone know anything about the maintenance on these? Any issues that make them particularly nightmarish?

Not much, but if I wasn't getting the S8, I'd probably be looking at one right now (only 24k miles too). I'm assuming you are keeping the Phaeton, so do it.

Thought of trading my '87 300D in for a 300SD of this vintage, and the salesman, a friend, told me to keep driving the E class. Apparently these were servicing nightmares, something about the electrics, if I recall correctly. Drove one, and it was ponderous - an S Class low in my mind.

Not really, only a general cheapening of materials in and out. I would prefer a 124 or 6 coupe just for the build quality and serviceability of minor components but i have no doubt if you find a cared for one it will be at the bottom of its depreciation curve and it will be a future classic. Ah yes, Der Dicke. A beauty, but truly massive. Did you know that it had 2 antennas which would automatically pop up when you put it in reverse. Lovely cars.

All I can really say is avoid hydraulic suspension, and don't get an older one than that. Should pretty much be fine otherwise, aside from normal wear and maintenance. Oh, and cars depreciate but their parts don't.
